Meal planning for the week.

Standard

I am starting with a Whole Chicken  That I cooked overnight.

Monday..

OVERNIGHT CHICKEN CASSEROLE
2 cups uncooked macaroni
2 cups chopped cooked chicken
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
2 cup milk
1 medium onion
1/2 cup diced cheese
salt and pepper, to taste

Combine all ingredients and mix well. Refrigerate overnight (at least 6 hours).

Bake at 350°F for 1 hour. Remove from oven; sprinkle top with herbed stuffing mix and bake for an additional 15 minutes.

This recipe may be doubled and half may be wrapped tightly and stored in the freezer.Freezes real well and is so handy

When doubling, use 2 cans of the Cream of Chicken soup, 1 can of the Cream of Mushroom soup, and 1 can of Cream of Celery. Turkey may be substituted for chicken.

Makes 4-6 servings.

1 pound ground beef
1 onion, chopped
2 cups Minute Rice
5 medium,round green peppers
3 cups any kind jar spaghetti sauce
shredded mozzarella. cheese
Cut off tops of green peppers and clean seeds out. Boil in large pot for 5 minutes, or until peppers are a dull green, if desired. Alternatively, the peppers may simply be brushed with olive oil for a roasted effect.Brown beef with onion. Add uncooked rice and 2 cups of spaghetti sauce.

Fill peppers with meat/rice mixture. Pour remaining cup of spaghetti sauce over peppers. Cover with aluminum foil and bake in a preheated 375°F for 25 minutes or until peppers are tender.

Remove foil and sprinkle with grated mozzarella cheese. Bake for another 10 minutes, uncovered, or until cheese is melted and bubbly.

 Wednesday…

1 (14 oz pkg) Boboli pizza pre-baked crust
1/2 bottle BBQ sauce
1 cup gouda cheese
1 (9 oz) fully cooked, carved chicken breast
1/4 cup red onion, thinly sliced
1/2 cup reduced-fat shredded cheddar cheeses
Fresh cilantro leaves.
Preheat oven to 425°F. Place crust on baking sheet. Spread with BBQ sauce. Sprinkle with gouda cheese. Top with chicken, onion and cheddar cheese.Bake for 20-25 minutes or until cheese has melted.

 Thursday…

EASY BREAKFAST CASSEROLE

1 lb. sausage, bacon or ham
3/4 c. sharp cheddar cheese
1/2 c. mushrooms & pieces
5 eggs
1 3/4 c. milk
6-8 slices of bread (cubed)
Place cubed bread in casserole dish, put cooked sausage, bacon or ham on top. Add sharp cheese, mushrooms on top of meat.Beat eggs, milk, salt and pepper, pour over top.

Let stand 5 minutes then bake at 350 until brown (35 minutes).

FRIDAY…

BAKED SPAGHETTI AND CHEESE

1 lb. uncooked spaghetti
2 tbsp. salt
4 to 6 qt. boiling water
1 (10-1/2 oz.) can condensed cream of celery soup, undiluted
4 cups (about 1 lb.) Cheddar cheese, grated
1 cup milk
1/2 cup chopped parsley
2 hard-cooked eggs sliced (optional)
Gradually add spaghetti and salt to rapidly boiling water, so that water continues to boil. Cook, uncovered, stirring occasionally until tender. Drain in colander. Combine with soup, 3 cups cheese, milk and parsley. Turn into 2-1/2 quart casserole dish. Sprinkle remaining cheese on top.Bake in a preheated 375°F oven for 15 minutes, until bubbling. Garnish with egg slices if desired.

Makes 8 servings.

 With a Salad.

SATURDAY…

Breakfast.. biscuts and gravy fresh fruit

Lunch.. homemade hot pockets

Dinner left overs.

Sunday… Not sure yet.
